Multiple Meatballs
Something I was able to do since the world shutdown was to source some restaurant style meats. Since they aren’t selling in the restaurants, some supply chain companies have been making stock available to the public. I signed up to keep that supply chain alive and well, ready to rock when the world re-opens. I was able to secure a few items that included both bacon and pre-cooked 1oz meatballs. The meal I wanted to talk about is fairly simple and definitely not healthy. I threw the meatballs into a pre-heated 425F oven and started cooking five strips of bacon up in the stove top. I finished the bacon to a crispy finish. I cut some bread off a “fresh” crusty roll I got at the bakery of the Walmart I shop at (only $1). Once the bacon had vacated the pan I softened crusts of the bread in the bacon grease for a few seconds being very careful to not soak up an obscene amount of grease. I had turned the meatballs halfway through the 14 minute cook time and when they were done I cranked the heat under the pan of grease and put half the meatballs in to finish in my grease bath. I spread some bacon ranch salad dressing on the bread and laid down a nice bacon support layer. I took the meatballs out of the pool and cut them in half, placing them into the sandwich, flat side down. Plop the top on and you have a super bacon charged sandwich. Not exactly a healthy vegan dream but a savoury delight! I’d do it again but probably not for a few weeks.
